"Go plant the bean when the moon is light, and you will find that this is right; plant the potatoes when the moon is dark, and to this line you always hark, but if you vary form this rule, you will find you are a fool, if you always follow this rule to the end, you will always have money to spend."

1st and 2nd Quarter (moon is waxing). Plant above ground yields. Do not plant on the day the moon is new, full or changing quarters. Graft trees just before the sap flows.

3rd and 4th Quarter (moon is waning). Plant crops that grow underground in the third quarter. A waning moon is good for harvesting most crops, canning and preserving vegetables and jams. Kill weeds and trees, turn the soil. Slaughter livestock in the 4th quarter before the new moon.

"If the moon holds water it will be dry .  If water from it can leak rain is nigh."

"When the moon lies on her back, she sucks the wet into her lap."

The shape of the new moon is a rain indicator. It can be holding water or pouring it out. If it is lying on its back, it's holding onto the  water- no rain.   It the moon is facing down the water can pour out- meaning rain.

"When halo rings the moon or sun
Rain's approaching on the run."

This is a favorite saying of fishermen, who use a halo around the moon as an indicator of fishing conditions.

Have you ever seen a fairy ring?    A fairy ring in a field or lawn beside a house was believed to bring good fortune. Harm was believed to come to a cow that stepped within the circle or ate its grass. It was also thought that you would become enchanted if you entered a fairy ring during a full moon.

From Handbook of Texas Online-

The moon is important in the Texas folklore. Among some representatives of almost every ethnic group in rural Texas, the moon is believed to pertain to birthing, weaning, breeding, planting, harvesting, canning, castrating, and egg hatching. Sleeping in moonlight will make one crazy. Looking at a new moon over the left shoulder will bring bad luck. Many serious fishermen pay attention to the signs of the moon. Some gardeners believe that tubers or root vegetables should be planted in the dark of the moon and leafy and above-ground vegetables in the light of the moon. Hogs butchered in the dark of the moon produce firm meat and abundant lard; soap made between the full moon and the last quarter will be firm. Wood cut during the right quarter of the moon will not snap when burned. Timbers cut in the last quarter of the moon will last longer. Some Mexican Americans of South Texas believe that the mesquite will not rot if cut during the full moon. Some East Texans believe that a tree cut in the dark of the moon in August will not sprout back, and its stump will rot within a year.
